Helen Hubbard sure knows how to get a crowd laughing. She should. She’s had 105 years to perfect her witty one-liners.

The self-proclaimed "Birthday Queen" had her birthday cake on January 8, and naturally, it came with a side of sass. "This is so good. Nobody talk to me until I eat it!" she joked, cracking up the room as she dove in.

Her wit is legendary at St. Luke’s Nursing Center in Carthage, where she resides. Cassie Nichols, the activities director, isn’t shy about sharing just how much Helen’s humor lights up the place. "It’s her party and she can sass if she wants to. She brings us all such joy!”

But Helen’s story is far from just clever quips and quick comebacks. She served as an Army dietician during World War II, bringing her strong, feisty spirit to everything she did. "Our mama is a proud veteran," says her son, Dolph Hubbard. "She could make a mean pot roast and a casserole out of anything. We were always eating well and having a blast!"

Despite her many accomplishments, two things stand out in Helen’s heart: her love for Silver Dollar City and the Kansas City Chiefs. "I love seeing all the craftsmen at Silver Dollar City," she said. "I could watch people all day long there." Her family has created countless memories at the park over the years, but that doesn’t mean Helen’s taking it slow.

In fact, when it comes to speed, this girl’s still got it. In her younger days, she rode a horse to her one-room schoolhouse but later opted for a different kind of “pony,” zipping around in her yellow Mustang. On her 103rd birthday, she even made a lap in an official NASCAR. "I do like to go fast sometimes," she admitted. "I just didn’t think I’d get old this fast!"

Her love for speed was recognized at the party by Jasper County Sheriff, Randee Kaiser, who jokingly warned her, "I better not catch you speeding in that car!" To which Helen shot back, "It’s not like I’d stop anyway!"

As part of the celebration, Helen was honored with a proclamation from Carthage Mayor Dan Rife, declaring January 8 as "Helen Hubbard Day." Among her many gifts was a beautiful flower arrangement from a team from Silver Dollar City who traveled north to celebrate their special fan.

"Goodness," she said with a twinkle in her eye, "I guess after 105 years, I’ve figured out how to be the center of attention. You just gotta get old!
